Preparation Begins
Our experience begins with the careful selection and preparation of the cuy. We'll scald it in hot water to gently remove its hair, following traditional Andean methods.
Traditional Preparation Continues
Next, we'll carefully clean and reserve select organs for a delicious side dish. The cuy will then be seasoned with aromatic huacatay and other traditional spices. Finally, a wooden skewer will be inserted to prepare the cuy for roasting.

Roasting to Perfection
Next, we'll place the cuy in front of the oven, carefully rotating it every 10-15 minutes to ensure even cooking. After approximately 35 minutes, the cuy will be perfectly roasted and ready to be served.
